Pump Street are exceptional bakers and chocolate creators making small batch bars with beans imported directly from farmers all over the world.
This multi award winning bar is a unique combination of two of Pump Street's signature products: chocolate and sourdough. Sourdough crumbs and a touch of sea salt add crunch and a smooth, malty flavour to the delicious Ecuadorian chocolate.
Bean character -The trees are sourced from eh genetic stock from the Rockefeller Foundation’s Genback dating back to the 1950s. Upon harvest, the beans are pre-dried before fermentation which significantly affects the process and reduces both the acidity and the bitterness. The resulting beans are rich in caramel and nutty flavour. The beans have been farmed on Hacienda Limon, Los Rios Province, Ecuador.
