Dark Milk 55% sits between milk and dark chocolate, keeping the cocoa depth and slight bitterness of higher-percentage bars while softening the texture with milk. The result is balanced and rounded, with roasted cocoa notes, light caramel sweetness and a cleaner finish than conventional milk chocolate.

Produced bean-to-bar in Denmark by Friis-Holm Chokolade, the bar uses a higher cacao percentage than standard milk chocolate, giving it more structure and a slower melt. The milk supports the cacao rather than dominating it, allowing the darker cocoa character to stay present throughout.

Founded by Danish chef Mikkel Friis-Holm Ottosen, the company began after his time working in San Francisco during the late 1990s, where he was introduced to the emerging craft chocolate movement through Scharffen Berger Chocolate. That early exposure led to long-term cacao partnerships in Nicaragua and the launch of Friis-Holm’s own chocolate production in 2007.

From the beginning, Friis-Holm focused on direct relationships with cacao farmers and careful control over every stage of production. The brand spent several years refining recipes and techniques alongside Bonnat Chocolatier in France before opening its own Danish factory in 2015, allowing complete bean-to-bar production under one roof. Today, the company operates from the Danish countryside near Roskilde, producing chocolate bars recognised internationally for their clarity of flavour and technical craftsmanship.

Friis-Holm has become especially well known for its single-origin bars and work with rare cacao varieties such as Chuno and Nicaliso.
