Chuno 70% Triple Turned is made with cacao that has gone through an extended fermentation process, where the beans are turned three times during fermentation to develop a cleaner, more layered flavour profile. The result is a dark chocolate with pronounced acidity, deep cocoa notes and a sharper, more structured finish than standard Chuno bars.
Produced bean-to-bar in Denmark by Friis-Holm Chokolade, the bar highlights how fermentation changes the character of cacao as much as origin or roast. The additional turning creates a more even fermentation, bringing greater clarity and balance to the final chocolate without softening its intensity.

Friis-Holm Chokolade is a Danish bean-to-bar chocolate maker known for producing small-batch chocolate with a strong focus on cacao genetics, sourcing transparency, and flavour precision. Founded by Danish chef Mikkel Friis-Holm Ottosen, the company began after his time working in San Francisco during the late 1990s, where he was introduced to the emerging craft chocolate movement through Scharffen Berger Chocolate. That early exposure led to long-term cacao partnerships in Nicaragua and the launch of Friis-Holm’s own chocolate production in 2007.
From the beginning, Friis-Holm focused on direct relationships with cacao farmers and careful control over every stage of production. The brand spent several years refining recipes and techniques alongside Bonnat Chocolatier in France before opening its own Danish factory in 2015, allowing complete bean-to-bar production under one roof.
