La Dalia 85% is built from a regional blend of cacao grown around La Dalia in northern Nicaragua. Dark, dry and lightly rustic, it carries roasted cocoa notes alongside walnut bitterness, dried fruit and a softer sweetness that rounds out the finish without flattening the cacao character.

Made bean-to-bar in Denmark by Friis-Holm Chokolade, the bar uses cacao sourced from multiple smaller growers rather than a single estate. The result feels broader and less uniform, with more movement across the palate and a slightly raw edge that suits the blend’s identity.

The higher cocoa percentage keeps the texture firm and focused, though the remaining sugar softens some of the sharper bitterness found in the 100% version. Founded by Danish chef Mikkel Friis-Holm Ottosen, the company began after his time working in San Francisco during the late 1990s, where he was introduced to the emerging craft chocolate movement through Scharffen Berger Chocolate. That early exposure led to long-term cacao partnerships in Nicaragua and the launch of Friis-Holm’s own chocolate production in 2007.

From the beginning, Friis-Holm focused on direct relationships with cacao farmers and careful control over every stage of production. The brand spent several years refining recipes and techniques alongside Bonnat Chocolatier in France before opening its own Danish factory in 2015, allowing complete bean-to-bar production under one roof.
