A 66% dark chocolate made from cacao grown at Finca Ana Maria in Guatemala. The beans are fermented and dried at origin, then roasted in small batches to retain the structure and clarity of the cocoa.
The profile leans balanced rather than sharp. Cocoa comes through clearly, with a gentle sweetness and softer acidity that keeps the bar steady from start to finish. The texture is smooth, with a consistent melt that carries flavour evenly.

Ruby Hue is a Bristol-based craft chocolate brand focused on small-batch, bean-to-bar production and bold flavour development. Founded by Ruth “Ru” Scanlon and Tom Hughes, the company brings together high-level pastry training and international mixology to create chocolate with a strong emphasis on origin and pairing.
Ru built her career in Michelin-starred kitchens, later becoming Head Chef at the Wimbledon Royal Box and reaching the semi-finals of Bake Off: The Professionals. Tom’s background in global bartending and competition mixology adds a complementary approach centred on balance and flavour layering.
Originally launched as a pop-up, Ruby Hue formally took shape in 2020, pivoting into full bean-to-bar production during a challenging period for hospitality. Rather than relying on pre-made chocolate, the founders invested in learning the full process—from sourcing cacao to in-house production.
Now recognised as Bristol’s first dedicated bean-to-bar chocolate maker, Ruby Hue works with ethically sourced cacao from regions including Peru, Uganda, Guatemala, and Thailand. The brand positions itself around transparency, craftsmanship, and a clear focus on flavour-led chocolate designed for modern retail.
