Pump Street Chocolate
Bakery-led craft chocolate
From bakery to chocolate
What sets Pump Street apart is the crossover between disciplines. Techniques and ingredients from baking are carried directly into chocolate making, creating bars that feel structured, textural and often unexpected.
Flavour through process
Rather than adding sweetness or intensity, the focus is on balance. Fermentation, roasting and baking all play a role, with each element contributing to a more complex but controlled final flavour.
Pump Street Chocolate
Pump Street’s approach starts with bread. As a working bakery, many of their most recognisable bars incorporate house-made sourdough which is baked, dried and folded into chocolate to create a distinct texture and flavour that sits somewhere between sweet and savoury.
Alongside these, the range includes single-origin bars that focus purely on cacao, as well as more layered recipes using ingredients like rye, milk crumb and spices and all developed with the same attention to process.
