Wild Drinks: The New Old World of Small-Batch Brews, Ferments and Infusions by Sharon Flynn is a practical guide to making naturally fermented, brewed and infused drinks at home.
Across six chapters and with more than 60 recipes, the book explores the fundamentals of wild fermentation alongside recipes for kombucha, water kefir, ginger beer, kvass, cider, country wine, wild soda, fruit vinegars and mead. Grain-based drinks include wild beer and doburoku, a Japanese farmhouse-style sake, while futher chapters cover shrubs, flavoured waters, syrups and liqueurs.
The book introduces the equipment and techniques needed to begin fermenting and provides historical and cultural context for traditional fermentation practices. A final chapter looks at ways to use fermentation by-products in cooking, with recipes including kimchi pancakes and Basque cider chicken.

Sharon Flynn is an Australian fermentation expert and founder of the award-winning food and drinks company The Fermentary. Her interest in natural fermentation began while living in Japan in her twenties, where she learned traditional household fermentation techniques from a local Japanese grandmother, including making miso, tofu and tsukemono. Flynn has spent more than 20 years exploring fermentation traditions while living and travelling internationally and has undertaken fermentation residencies in both Japan and the United States. Wild Drinks follows her first book, Ferment For Good.
