Seasonal British Gooseberry Jam
Single Variety Co. creates this richly tart cherry preserve using Morello Cherries, known for their sharp and bitter taste, which makes them ideal for jam rather than eating fresh. The preserve is full of cherry pieces and is cooked in small batches for a minimal time to retain its fresh fruitiness. Sugar is added to offset the sourness, along with fresh lemon juice to achieve the right acidity balance.
Morello cherries are extremely low in pectin, so this is a looser set preserve, ideal for spooning and great with yoghurt or porridge.
