Chilli BirdxHott - Crispy Thai Mayo Collaboration
This vegan chilli mayo folds Chilli Bird’s White Pepper & Extra Garlic chilli oil into a rich mayo base, including the crispy garlic, shallot and chilli bits. The result sits somewhere between condiment and chilli crisp — creamy, savoury and textured, with makrut lime leaf and white pepper running through the heat.
Made in small batches in Scotland as a collaboration between Chilli Bird and Hott (formally Heriot Hott), it leans more aromatic than aggressively hot. The miso and tamari bring depth, while lemon juice and red wine vinegar keep the finish sharp enough to cut through richer food.
Unlike standard sriracha mayo, this keeps the crunch and fragrance of the original chilli oil intact. The texture shifts slightly from batch to batch, with visible fibres from lemongrass and makrut lime leaves left in deliberately.
